Description
A soul-warming beef stew filled with tender beef, vibrant vegetables, and rich broth, perfect for chilly evenings.
Ingredients
Scale
- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 4 large potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium-high heat. Once hot, add the beef pieces and brown on all sides, about 5-7 minutes.
- Add the chopped onion and minced garlic to the pot, cooking until softened, around 3-4 minutes.
- Stir in the tomato paste, thyme, bay leaf, salt, and pepper, ensuring the beef is well coated.
- Pour in the beef broth, bring the mixture to a gentle simmer, and reduce to low heat.
- Cover the pot and allow the stew to cook for 6-8 hours, stirring occasionally to prevent sticking.
- About an hour before serving, add the diced potatoes and sliced carrots, stirring gently to incorporate.
- Adjust the seasoning as needed before serving warm and hearty.
Notes
Browning the beef properly enhances flavor; consider adding fresh herbs before serving for added freshness.
