Ingredients

  • 1 can (14 ounces) diced tomatoes

  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
  2. Increase the heat slightly and add the beef cubes, searing until golden brown.
  3. Stir in the diced tomatoes, beef broth, oregano, thyme, salt, and pepper. Bring to a gentle simmer.
  4. Cover and reduce heat to low, cooking for 1.5 to 2 hours until the beef is fork-tender.
  5. Fold in the orzo and continue cooking for 10-12 minutes until al dente.
