- 1 pound beef stew meat, cut into cubes
- 1 cup orzo pasta
- 1 can (14 ounces) diced tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil
- Grated cheese for topping
- Crusty bread and Greek salad for serving
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
- Increase the heat slightly and add the beef cubes, searing until golden brown.
- Stir in the diced tomatoes, beef broth, oregano, thyme, salt, and pepper. Bring to a gentle simmer.
- Cover and reduce heat to low, cooking for 1.5 to 2 hours until the beef is fork-tender.
- Fold in the orzo and continue cooking for 10-12 minutes until al dente.
- Ladle into bowls, sprinkle with grated cheese, and serve hot with crusty bread and Greek salad.
Notes
For a vegetarian version, substitute beef with mushrooms or lentils and use vegetable broth. Use fresh herbs for enhanced flavor.
