Description

A quick and delicious skillet meal featuring savory beef, sweet peppers, and tender zucchini, perfect for busy weeknights.

Ingredients

Scale
  • 1 pound Ground Beef
  • 2 cups Bell Peppers (mixed colors)
  • 1 medium Zucchini
  • 1 medium Onion
  • 3 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Dried Oregano
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Red Chili Flakes
  • 2 tablespoons Fresh Parsley (chopped)

Instructions

  1. Prep: Dice the onion, bell peppers, and zucchini into bite-sized pieces and mince the garlic. Measure spices and have the tomato paste ready for a quick cook.
  2. Heat skillet: Warm 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  3. Cook beef: Add ground beef and season lightly with salt and black pepper; break into pieces and brown without stirring constantly.
  4. Sauté aromatics: Push beef to one side, add the onion and cook until translucent, then add garlic and cook until fragrant.
  5. Build flavor: Stir in tomato paste, paprika, oregano, and red chili flakes; cook for two minutes.
  6. Simmer briefly: Lower heat and let everything meld for 3 to 5 minutes until vegetables are tender but still have bite.
  7. Serve: Spoon straight from the skillet onto plates and enjoy.

Notes

For a lighter option, swap ground beef for ground turkey or tofu. Can be served with rice, tortillas, or a salad.
