- 2 medium sweet potatoes
- 1 pound boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup corn (canned or frozen)
- 1 cup black beans, rinsed and drained
- 1 avocado, sliced
- Chopped cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Dice the sweet potatoes and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- While the sweet potatoes are roasting, cook the chicken in a skillet over medium heat until cooked through, about 6-7 minutes on each side. Brush with BBQ sauce during the last few minutes of cooking.
- Shred the chicken and toss with remaining BBQ sauce.
- Assemble the bowls by placing roasted sweet potatoes at the bottom, followed by chicken, corn, black beans, and avocado.
- Garnish with chopped cilantro and serve.
Notes
For a vegan version, swap shredded chicken for mushrooms or tofu and use vegan BBQ sauce.
