- 4 chicken breasts
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup spinach, chopped
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat a splash of olive oil over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Sear the chicken for 3-4 minutes on each side, until golden-brown.
- Remove the chicken from the skillet and set aside on a plate.
- In the same skillet, add minced garlic and sauté for about 30 seconds or until it’s fragrant.
- Add chopped sun-dried tomatoes and spinach, cooking until the spinach is wilted—just a couple of minutes should do.
- Pour in the heavy cream, stirring well and bringing the mixture to a gentle simmer.
- Mix in the grated Parmesan cheese, letting it melt smoothly into the creamy sauce.
- Return the chicken to the skillet, spooning the luscious sauce over the tops. Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes or until the chicken is fully cooked.
- Serve this marvel over a bed of pasta or alongside your favorite sides for a complete meal.
Notes
Use fresh chicken for best results. You can make the sauce ahead of time and refrigerate or freeze it for convenience.
