- 2 cups broccoli florets, finely chopped
- 1 cup breadcrumbs
- 1 1/2 cups shredded cheddar cheese
- 1/3 cup Parmesan cheese, grated
- 1 large egg
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- Cooking spray or a drizzle of olive oil
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
- Steam or blanch the broccoli florets for 2-3 minutes until tender. Drain well and finely chop.
- In a large bowl, combine the chopped broccoli, breadcrumbs, cheddar cheese, Parmesan cheese, egg, garlic powder, salt, and pepper. Mix until everything holds together.
- Scoop out tablespoon-sized portions and roll into balls. Arrange them on the prepared baking sheet.
- Lightly spray or brush the broccoli cheese balls with cooking spray or olive oil for extra crispiness.
- Bake for 18-20 minutes, or until golden and crispy on the outside.
- Serve them warm with your favorite dipping sauce, such as ranch or marinara.
Notes
For best results, chill the mixture before baking to help hold shape. Feel free to substitute the egg with a flaxseed mix for a vegan version.
