Description

A hearty and nourishing lentil soup infused with vibrant spices, perfect for cozy meals any time of year.


Ingredients

  • 1 cup of red lentils (uncooked & washed)
  • 1 medium onion (chopped)
  • 2 medium carrots (chopped)
  • 1 medium celery stalk (diced)
  • 1 tsp of turmeric powder
  • 1/2 tsp of ground cumin
  • 1/2 tsp of salt
  • 1/2 tsp of black pepper
  • 4 cups of water
  • 1/2 a lemon (juiced)
  • 2 tbsp of olive oil
  • 1 tbsp of fresh parsley (chopped)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until slightly translucent, about 3-4 minutes.
  2. Toss in the chopped carrots and celery. Cook for 1-2 minutes, stirring occasionally, until they begin to soften.
  3. Add the washed red lentils and stir to combine for another minute.
  4. Add 4 cups of water, turmeric, cumin, salt, and pepper. Stir well to incorporate.
  5. Cover the pot, bring to a boil over high heat, then reduce to low and simmer for 30-45 minutes, or until lentils are tender.
  6. Remove from heat, squeeze in lemon juice, and serve hot garnished with fresh parsley.

Notes

Adjust seasonings to taste and consider adding smoked paprika or coconut milk for a twist.
