- 2 pounds beef chuck, cut into bite-sized pieces
- 1 cup apple cider
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced

- 2 pounds sweet potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
Instructions
- In a large pot, heat the olive oil over medium heat. Season the beef pieces with salt and pepper, then brown them thoroughly on all sides, about 7 minutes.
- Add the chopped onion and minced garlic to the pot. Cook until the onion becomes softened and fragrant, roughly 5 minutes.
- Pour in the apple cider, stirring everything to combine. Bring it to a gentle simmer, then cover, reducing the heat to low. Let it cook for 2-3 hours, until the beef is tender and easily falls apart.
- Meanwhile, place the cubed sweet potatoes in a pot filled with salted water. Bring to a boil, cooking until tender, around 15-20 minutes. Drain and return them to the pot.
- To the sweet potatoes, add the milk and butter. Mash until creamy and smooth, creating a comforting base for the beef stew.
- Spoon the tender beef stew over a generous helping of the creamy mashed sweet potatoes. Enjoy the comforting flavors of home in every bite!
