  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegan butter, softened (for filling)
  • 2 tablespoons brown sugar (for filling)
  • 1 tablespoon ground cinnamon (for filling)
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons plant-based milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together gluten-free flour, almond flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. Using a pastry blender or your fingers, cut in the cold vegan butter until the mixture resembles coarse crumbs.
  4. Stir in the applesauce and vanilla extract until a soft dough forms.
  5. In a small bowl, mix together the softened vegan butter, brown sugar, and cinnamon for the filling.
  6. On a lightly floured surface, roll out the dough into a rectangle, about 1/4-inch thick.
  7. Spread the cinnamon filling evenly over the dough, reaching all edges.
  8. Carefully roll the dough tightly into a log and slice it into 1/2-inch thick cookies.
  9. Place the cookies on the prepared baking sheet, leaving room between each.
  10. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  12. Whisk together the powdered sugar, plant-based milk, and vanilla extract for the glaze.
