Instructions
- In a skillet, heat olive oil over medium heat, swirling to coat the bottom.
- Add sweet street corn and cook, stirring until slightly charred and fragrant.
- Season the corn with chili powder, paprika, salt, and pepper, stirring to coat.
- In a large bowl, layer rice, followed by sliced grilled chicken and top with seasoned corn.
- Garnish with cilantro and lime, and serve immediately.
