A delightful slow cooker recipe for Italian chicken sandwiches, packed with robust flavors and warm comfort.

- 1 1/2 lbs boneless, skinless chicken breasts
- 1/2 cup good Italian dressing
- 2 tbsp tomato paste
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
- 1 (15 oz) can petite cut diced tomatoes (drained)
- 1/4 cup fresh basil (chopped)
- 4 slices Provolone cheese
- 8 slices frozen garlic bread
Instructions
- Place the boneless, skinless chicken breasts in a 6-quart slow cooker.
- Pour the drained diced tomatoes over the chicken.
- In a small bowl, mix the Italian dressing, tomato paste, sugar, salt, and red pepper flakes until smooth, then pour it over the chicken and tomatoes.
- Cover and cook on LOW for 6 hours.
- Shred the chicken using two forks and switch the slow cooker to the WARM setting.
- Prepare the garlic bread as per package directions and add a slice of Provolone cheese on top of four slices to melt.
- Stir in the fresh basil into the shredded chicken.
- Assemble the sandwiches with the chicken mixture on the cheesy garlic bread and top with another piece of garlic bread. Serve warm.
Notes
Adjust spices to taste and feel free to add veggies for extra crunch.
