  • 3 cloves garlic, finely minced
  • 0.5 cup low-sodium chicken broth
  • 0.33 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1 Tbsp cornstarch + 2 Tbsp cold water (optional slurry for thickening)
  • 1 cup heavy whipping cream (added at the end)
  • 0.5 cup freshly grated Parmesan cheese
  • 1 cup fresh baby spinach, roughly chopped

Instructions

  1. Spray a slow cooker with nonstick spray and arrange the chicken in a single layer.
  2. Season the chicken with Italian seasoning, salt, paprika, and black pepper, rubbing the spices into the meat for added flavor.
  3. In a mixing bowl, combine chicken broth with minced garlic, then pour the mixture evenly over the chicken.
  4. Scatter the sun-dried tomatoes on top for a burst of flavor.
  5. Cover the slow cooker and cook on LOW for 3-4 hours or HIGH for 2-3 hours until the chicken is incredibly tender.
  6. (Optional) For a shredded chicken vibe, use two forks to shred the chicken directly in the slow cooker once it’s done.
  7. Stir in the heavy cream, grated Parmesan cheese, and chopped spinach, mixing until everything is beautifully combined.
  8. Cover and cook on LOW for an additional 15-20 minutes, or on HIGH for 10 minutes, until the spinach is wilted and vibrant.

Notes
