- 2 lbs boneless, skinless chicken breasts or thighs (4 large pieces)
- 1 tsp Italian seasoning
- 0.5 tsp paprika
- 0.5 tsp salt
- 0.25 tsp black pepper
- 3 cloves garlic, finely minced
- 0.5 cup low-sodium chicken broth
- 0.33 cup sun-dried tomatoes, oil-packed, drained and chopped
- 1 Tbsp cornstarch + 2 Tbsp cold water (optional slurry for thickening)
- 1 cup heavy whipping cream (added at the end)
- 0.5 cup freshly grated Parmesan cheese
- 1 cup fresh baby spinach, roughly chopped
Instructions
- Spray a slow cooker with nonstick spray and arrange the chicken in a single layer.
- Season the chicken with Italian seasoning, salt, paprika, and black pepper, rubbing the spices into the meat for added flavor.
- In a mixing bowl, combine chicken broth with minced garlic, then pour the mixture evenly over the chicken.
- Scatter the sun-dried tomatoes on top for a burst of flavor.
- Cover the slow cooker and cook on LOW for 3-4 hours or HIGH for 2-3 hours until the chicken is incredibly tender.
- (Optional) For a shredded chicken vibe, use two forks to shred the chicken directly in the slow cooker once it’s done.
- Stir in the heavy cream, grated Parmesan cheese, and chopped spinach, mixing until everything is beautifully combined.
- Cover and cook on LOW for an additional 15-20 minutes, or on HIGH for 10 minutes, until the spinach is wilted and vibrant.
- Serve this luscious dish over rice, pasta, or mashed potatoes for a hearty meal.
Notes
For a spicy kick, consider adding crushed red pepper flakes or diced jalapeños. This dish can also be adapted for a vegan version using chickpeas and coconut cream.
