Ingredients

  • 8 chicken thighs, skinless
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 3 tablespoons butter, chopped into small pieces
  • 1/2 cup chicken broth
  • 1 teaspoon chicken bouillon
  • 1/2 teaspoon onion powder
  • Zest of 2 lemons
  • Juice of 2 lemons
  • Salt and pepper to taste
  • 1 cup milk
  • 2 tablespoons cornstarch
  • Fresh parsley and Parmesan cheese, for garnish

Instructions

  1. Season the chicken thighs generously with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat and brown the chicken thighs for about 3-4 minutes on each side.
  3. Transfer the chicken to the slow cooker and sprinkle Italian seasoning, onion powder, and chicken bouillon over the thighs.
  4. Pour in the chicken broth, add butter, lemon zest, and lemon juice.
  5. Cover and set the slow cooker to low for 4 hours or high for 2 hours.
  6. Once cooked, remove the chicken from the slow cooker and set aside.
  7. For the sauce, mix cornstarch with 1/4 cup milk in a saucepan and add to the cooking liquid, stirring over medium heat until thickened.
  8. Pour the creamy sauce over the chicken and garnish with fresh parsley and Parmesan cheese before serving.

Notes

For a lighter version, substitute milk with a non-dairy alternative. Use skinless thighs for a leaner dish.
