- 8 chicken thighs, skinless
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- 3 tablespoons butter, chopped into small pieces
- 1/2 cup chicken broth
- 1 teaspoon chicken bouillon
- 1/2 teaspoon onion powder
- Zest of 2 lemons
- Juice of 2 lemons
- Salt and pepper to taste
- 1 cup milk
- 2 tablespoons cornstarch
- Fresh parsley and Parmesan cheese, for garnish
Instructions
- Season the chicken thighs generously with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and brown the chicken thighs for about 3-4 minutes on each side.
- Transfer the chicken to the slow cooker and sprinkle Italian seasoning, onion powder, and chicken bouillon over the thighs.
- Pour in the chicken broth, add butter, lemon zest, and lemon juice.
- Cover and set the slow cooker to low for 4 hours or high for 2 hours.
- Once cooked, remove the chicken from the slow cooker and set aside.
- For the sauce, mix cornstarch with 1/4 cup milk in a saucepan and add to the cooking liquid, stirring over medium heat until thickened.
- Pour the creamy sauce over the chicken and garnish with fresh parsley and Parmesan cheese before serving.
Notes
For a lighter version, substitute milk with a non-dairy alternative. Use skinless thighs for a leaner dish.
