- 2 boneless, skinless chicken breasts
- 1 jar (16 oz) salsa
- 2 cups cooked rice
- 1 avocado, diced
- ½ cup fresh cilantro, chopped
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (15 oz) black beans, drained and rinsed
- ¼ cup cilantro lime vinaigrette
Instructions
- Place the chicken breasts in the bottom of the slow cooker, then pour the salsa over the top.
- Cover the slow cooker and set it on low heat for 4 to 6 hours.
- Once cooked, remove the chicken and shred it before returning it to the pot.
- Stir in the cooked rice, black beans, and chopped cilantro.
- Serve in bowls, topping each with diced avocado and shredded cheese.
- Drizzle cilantro lime vinaigrette on top before serving.
