Description

A comforting and customizable slow cooker chicken burrito bowl filled with tender chicken, zesty salsa, and a variety of toppings.


Ingredients

  • 4 chicken breasts
  • 1 cup salsa
  • 1 cup brown rice
  • 1 ripe avocado
  • Fresh cilantro (for garnish)
  • 1 cup cheddar cheese (shredded)
  • 1 can black beans (drained and rinsed)
  • Cilantro lime vinaigrette

Instructions

  1. Place the chicken breasts in the slow cooker and pour the salsa over the top.
  2. Secure the lid and cook on low for 6-8 hours or high for 3-4 hours.
  3. In the last hour of cooking, gently stir in the black beans and brown rice.
  4. Once cooked, remove the chicken, shred it, and mix back into the slow cooker.
  5. Scoop the mixture into bowls and top with avocado, cheddar, cilantro, and vinaigrette.
