- 4 chicken breasts
- 1 cup salsa
- 1 cup brown rice
- 1 ripe avocado
- Fresh cilantro (for garnish)
- 1 cup cheddar cheese (shredded)
- 1 can black beans (drained and rinsed)
- Cilantro lime vinaigrette
Instructions
- Place the chicken breasts in the slow cooker and pour the salsa over the top.
- Secure the lid and cook on low for 6-8 hours or high for 3-4 hours.
- In the last hour of cooking, gently stir in the black beans and brown rice.
- Once cooked, remove the chicken, shred it, and mix back into the slow cooker.
- Scoop the mixture into bowls and top with avocado, cheddar, cilantro, and vinaigrette.

Feel free to customize with your favorite toppings such as sour cream, corn, or diced tomatoes.
