A hearty breakfast casserole combining savory sausage, creamy cheese, and seasoned eggs, perfect for any brunch gathering.

- 1 roll of breakfast sausage
- 1 (30 oz) bag of frozen shredded potatoes
- 1 (32 oz) package of shredded colby jack cheese
- 8–12 large eggs, beaten
- 2–4 cups of milk
- 1 tablespoon garlic salt
Instructions
- In a skillet over medium heat, brown the breakfast sausage until fully cooked. Drain excess grease and set aside.
- In your slow cooker, place half of the frozen shredded potatoes at the bottom.
- Sprinkle half of the shredded colby jack cheese evenly over the potatoes.
- Top with half of the cooked sausage.
- Add the remaining potatoes, followed by the rest of the sausage and more cheese layers on top.
- Sprinkle with garlic salt.
- In a separate bowl, whisk together the beaten eggs and enough milk to achieve your desired consistency. Pour this evenly over the layered ingredients.
- Cover and set the slow cooker to low, cooking for 8 hours.
Notes
Feel free to customize with your favorite breakfast meats or veggies. Can be prepared a day in advance and also freezes well.
