A quick and flavorful Mexican pizza recipe that combines seasoned beef, gooey cheese, and fresh toppings for a delicious meal.

- 8 flour tortillas (or corn tortillas)
- 1 lb ground beef
- 2 tbsp taco seasoning
- 1/4 cup water
- 4 tbsp enchilada sauce
- 8 oz refried beans (1/2 can)
- 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
- 1 tomato (roma or beefsteak, seeds removed and diced)
- 1 small red onion (diced)
- 1/4 cup black olives
- 1/4 cup sour cream
- 2 green onions (finely diced)
Instructions
- In a large frying pan over medium heat, add the ground beef and cook for about 5-8 minutes until browned. Drain any excess grease.
- Stir in the taco seasoning, water, and 4 tbsp of enchilada sauce; let simmer for 1-2 minutes.
- Spread a layer of refried beans on one tortilla, add seasoned beef and a sprinkle of cheese, and top with another tortilla.
- Spread 1 tbsp of enchilada sauce on the top tortilla and add the remaining shredded cheese.
- Cook in an air fryer at 400°F for 5 minutes, in an oven at 350°F for 8-10 minutes, or pan-fry in a skillet for 4-5 minutes until the cheese is melted and slightly golden.
- Garnish with diced tomatoes, red onion, slices of black olives, sour cream, and green onions before serving.
Notes
Customize your pizza by adding jalapeños for spice or using a vegan meat substitute for a lighter, plant-based option. Serve fresh for the best experience.
