Description

A quick and flavorful Mexican pizza recipe that combines seasoned beef, gooey cheese, and fresh toppings for a delicious meal.


Ingredients

  • 8 flour tortillas (or corn tortillas)
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 4 tbsp enchilada sauce
  • 8 oz refried beans (1/2 can)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
  • 1 tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives
  • 1/4 cup sour cream
  • 2 green onions (finely diced)

Instructions

  1. In a large frying pan over medium heat, add the ground beef and cook for about 5-8 minutes until browned. Drain any excess grease.
  2. Stir in the taco seasoning, water, and 4 tbsp of enchilada sauce; let simmer for 1-2 minutes.
  3. Spread a layer of refried beans on one tortilla, add seasoned beef and a sprinkle of cheese, and top with another tortilla.
  4. Spread 1 tbsp of enchilada sauce on the top tortilla and add the remaining shredded cheese.
  5. Cook in an air fryer at 400°F for 5 minutes, in an oven at 350°F for 8-10 minutes, or pan-fry in a skillet for 4-5 minutes until the cheese is melted and slightly golden.
  6. Garnish with diced tomatoes, red onion, slices of black olives, sour cream, and green onions before serving.

Notes

Customize your pizza by adding jalapeños for spice or using a vegan meat substitute for a lighter, plant-based option. Serve fresh for the best experience.
