Description

A perfect harmony of crispy tortillas, seasoned beef, and melty cheese, this Mexican pizza captures the essence of comfort food and is great for gatherings.


Ingredients

  • 1 lb Ground Beef
  • 1 Taco Seasoning Packet
  • 8 Flour Tortillas (taco size)
  • 3 tablespoons Oil
  • 30-ounce can Refried Beans
  • 1/2 cup Mild Salsa
  • 10-ounce can Red Enchilada Sauce
  • 2 cups Shredded Cheddar/Jack Cheese
  • 1/2 cup Sliced Olives
  • 2 Roma Tomatoes – chopped
  • Shredded Lettuce
  • Sliced Green Onions
  • 1/2 cup Sour Cream

Instructions

  1. In a skillet over medium-high heat, cook the ground beef until browned. Stir in taco seasoning and combine well, breaking into small crumbles. Once cooked, set aside.
  2. Heat oil in a separate pan over medium heat. Briefly fry each tortilla for about 30 seconds per side until golden and crispy; drain on paper towels.
  3. Preheat the oven to 375°F (190°C) and prepare a baking sheet with a light layer of oil or non-stick spray.
  4. On the prepared baking sheet, spread a layer of refried beans on each tortilla. Follow with a layer of seasoned beef, mild salsa, and a sprinkling of shredded cheese. Repeat layering until all ingredients are used, ending with a cheese layer on top.
  5. Drizzle enchilada sauce generously over the top of the layered pizzas. Sprinkle with sliced olives and chopped tomatoes.
  6. Place in the oven and bake for 5-7 minutes, or until the cheese is bubbly and golden.
  7. Remove from oven, slice into wedges, and serve warm with shredded lettuce, green onions, and a dollop of sour cream on top.
