- 1 lb Ground Beef
- 1 Taco Seasoning Packet
- 8 Flour Tortillas (taco size)
- 3 tablespoons Oil
- 30-ounce can Refried Beans
- 1/2 cup Mild Salsa
- 10-ounce can Red Enchilada Sauce
- 2 cups Shredded Cheddar/Jack Cheese
- 1/2 cup Sliced Olives
- 2 Roma Tomatoes – chopped
- Shredded Lettuce
- Sliced Green Onions
- 1/2 cup Sour Cream
Instructions
- In a skillet over medium-high heat, cook the ground beef until browned. Stir in taco seasoning and combine well, breaking into small crumbles. Once cooked, set aside.
- Heat oil in a separate pan over medium heat. Briefly fry each tortilla for about 30 seconds per side until golden and crispy; drain on paper towels.
- Preheat the oven to 375°F (190°C) and prepare a baking sheet with a light layer of oil or non-stick spray.
- On the prepared baking sheet, spread a layer of refried beans on each tortilla. Follow with a layer of seasoned beef, mild salsa, and a sprinkling of shredded cheese. Repeat layering until all ingredients are used, ending with a cheese layer on top.
- Drizzle enchilada sauce generously over the top of the layered pizzas. Sprinkle with sliced olives and chopped tomatoes.
- Place in the oven and bake for 5-7 minutes, or until the cheese is bubbly and golden.
- Remove from oven, slice into wedges, and serve warm with shredded lettuce, green onions, and a dollop of sour cream on top.
Notes
Consider using lean ground turkey or plant-based alternatives for a lighter or vegetarian version. Customize toppings to suit your preferences.
