Description

A soft and sweet bread that combines honey and buttermilk for an irresistible flavor that warms the soul.


Ingredients

  • 1 tablespoon yeast
  • 1 pinch powdered ginger
  • 1 teaspoon sugar
  • 1/4 cup warm water (105°F – 110°F)
  • 2 cups warm cultured buttermilk (105°F – 110°F)
  • 1/3 cup honey
  • 1 teaspoon kosher salt
  • 3/4 teaspoon baking soda
  • 6 cups bread flour
  • 1/4 cup melted butter (cooled to warm)

Instructions

  1. In a medium bowl, mix the yeast, powdered ginger, sugar, and warm water. Let it rest for about 5 minutes until it bubbles and becomes foamy.
  2. In another bowl, whisk together the warm buttermilk, honey, salt, and baking soda until well blended. Combine this mixture with the foamy yeast.
  3. Gradually add 3 cups of flour into the bowl, mixing for 3-5 minutes until the mixture is smooth and cohesive.
  4. Slowly pour in the melted butter, mixing continuously until it’s fully incorporated into the dough.
  5. Gradually add the remaining flour, one cup at a time, mixing each addition until the dough begins to pull away from the sides of the bowl.
  6. Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
  7. Transfer the kneaded dough into a greased bowl, cover it, and allow it to rise in a warm place for about 90 minutes or until doubled in size.
  8. Once risen, punch down the dough gently, then divide it into two equal portions and shape each into a loaf, placing them in greased pans.
  9. Cover the loaves again and let them rise for another 45 minutes.
  10. Preheat your oven to 375°F and bake the loaves for approximately 30 minutes. If they darken too quickly, loosely cover them with foil.
  11. For a shiny finish, brush the tops with melted butter as soon as they come out of the oven. Allow to cool in pans for 10 minutes before transferring to a cooling rack.

Notes

This bread can be made in a bread machine. Make sure to use bread flour for the best texture.
