- 1/2 cup granulated sugar (for rolling the cookie dough)
- 1/4 cup unsalted butter (for filling)
- 1/2 cup creamy peanut butter (for filling)
- 1 1/2 cups powdered sugar (for filling)
- 2 tablespoons milk (for filling)
- 1/4 teaspoon vanilla extract (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter, brown sugar, and peanut butter until smooth and fluffy.
- Beat in the egg and vanilla extract until thoroughly incorporated.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Roll the dough into small balls and coat each in granulated sugar.
- Place the dough balls on the baking sheet, spacing them 2 inches apart, and flatten each with a fork.
- Bake for 8-10 minutes or until golden brown. Let cool for a few minutes before transferring to a wire rack.
- For the filling, mix together the softened butter, peanut butter, powdered sugar, milk, and vanilla extract until smooth.
- Once cooled, spread the filling between two cookies to create a sandwich.
Notes
Chill the dough if it’s too soft to handle, and avoid overbaking to keep cookies soft.
