Ingredients

  • 1/2 cup unsalted butter (softened)
  • 1 cup light brown sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup granulated sugar (for rolling the cookie dough)
  • 1/4 cup unsalted butter (for filling)
  • 1/2 cup creamy peanut butter (for filling)
  • 1 1/2 cups powdered sugar (for filling)
  • 2 tablespoons milk (for filling)
  • 1/4 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and peanut butter until smooth and fluffy.
  4. Beat in the egg and vanilla extract until thoroughly incorporated.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Roll the dough into small balls and coat each in granulated sugar.
  7. Place the dough balls on the baking sheet, spacing them 2 inches apart, and flatten each with a fork.
  8. Bake for 8-10 minutes or until golden brown. Let cool for a few minutes before transferring to a wire rack.
  9. For the filling, mix together the softened butter, peanut butter, powdered sugar, milk, and vanilla extract until smooth.
  10. Once cooled, spread the filling between two cookies to create a sandwich.
