- 3 pounds chicken breasts
- 4 tablespoons butter (divided)
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground ancho chile
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 4 tablespoons all-purpose flour
- 2 tablespoons butter
- 4 tablespoons drippings from chicken
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup milk
- 1/3 cup half and half
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, combine smoked paprika, ground ancho chile, garlic powder, salt, and pepper.
- Evenly rub the spice blend over the chicken breasts.
- Place the seasoned chicken breasts in a greased 13 x 9-inch baking dish and dot with ½ tablespoon of butter.
- Bake for 20-30 minutes until the internal temperature reaches 160°F (71°C). Tent with foil for 5 minutes.
- In a skillet, heat chicken drippings with 2 tablespoons of butter over medium heat.
- Sprinkle in the flour, whisk until golden.
- Gradually pour in milk and half and half, whisk until smooth and thickened (5-7 minutes).
- Taste gravy and adjust seasonings with salt and pepper.
Notes
Don’t overcook the chicken to retain moisture. Allow chicken to rest before slicing for best juiciness.
