Description

Ingredients

  • 3 pounds chicken breasts
  • 4 tablespoons butter (divided)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground ancho chile
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 4 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 4 tablespoons drippings from chicken
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup milk
  • 1/3 cup half and half

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine smoked paprika, ground ancho chile, garlic powder, salt, and pepper.
  3. Evenly rub the spice blend over the chicken breasts.
  4. Place the seasoned chicken breasts in a greased 13 x 9-inch baking dish and dot with ½ tablespoon of butter.
  5. Bake for 20-30 minutes until the internal temperature reaches 160°F (71°C). Tent with foil for 5 minutes.
  6. In a skillet, heat chicken drippings with 2 tablespoons of butter over medium heat.
  7. Sprinkle in the flour, whisk until golden.
  8. Gradually pour in milk and half and half, whisk until smooth and thickened (5-7 minutes).
  9. Taste gravy and adjust seasonings with salt and pepper.

Notes

Don’t overcook the chicken to retain moisture. Allow chicken to rest before slicing for best juiciness.
