- 3 tablespoons butter, divided
- 1 tablespoon olive oil
- 1 tablespoon all-purpose flour
- 1 cup low sodium chicken broth
- 1/2 cup milk
- 1/4 cup sour cream
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1 (1 oz.) packet Ranch seasoning mix
- Fresh parsley, for garnish (optional)
Instructions
- Pound the chicken breasts to a uniform 1-inch thickness. Season with salt and pepper.
- In a large skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Sear chicken on each side for 4-5 minutes until golden brown, then remove.
- Lower the heat and add remaining butter. Whisk in flour and cook for a minute.
- Slowly pour in chicken broth, scraping up browned bits for added flavor.
- Stir in milk, sour cream, onion powder, garlic powder, Italian seasoning, and ranch seasoning until smooth.
- Return chicken to the pan, spoon sauce over it, and let simmer until heated through, about 5-7 minutes.
- Serve hot, garnished with fresh parsley.
Notes
For a vegan option, substitute chicken with chickpeas or tofu and use coconut cream. Adjust spice levels to your preference.
