Ingredients

  • Salt and pepper, to taste
  • 3 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1 tablespoon all-purpose flour
  • 1 cup low sodium chicken broth
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 (1 oz.) packet Ranch seasoning mix
  • Fresh parsley, for garnish (optional)

Instructions

  1. Pound the chicken breasts to a uniform 1-inch thickness. Season with salt and pepper.
  2. In a large skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Sear chicken on each side for 4-5 minutes until golden brown, then remove.
  3. Lower the heat and add remaining butter. Whisk in flour and cook for a minute.
  4. Slowly pour in chicken broth, scraping up browned bits for added flavor.
  5. Stir in milk, sour cream, onion powder, garlic powder, Italian seasoning, and ranch seasoning until smooth.
  6. Return chicken to the pan, spoon sauce over it, and let simmer until heated through, about 5-7 minutes.
  7. Serve hot, garnished with fresh parsley.

Notes

For a vegan option, substitute chicken with chickpeas or tofu and use coconut cream. Adjust spice levels to your preference.
