- 4 boneless, skinless chicken breasts (5–8 oz. each)
- Salt and pepper to taste
- 3 tablespoons butter, divided
- 1 tablespoon olive oil
- 1 tablespoon flour
- 1 cup low sodium chicken broth
- ½ cup milk
- ¼ cup sour cream
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- 1 (1 oz.) packet ranch seasoning mix
- Fresh parsley, to garnish (optional)
Instructions
- Pound the chicken breasts to an even thickness of about 1 inch. Season with salt and pepper.
- In a large skillet, melt 1 tablespoon of butter and olive oil over medium-high heat and sear the chicken for 4–5 minutes on each side until golden brown. Remove from the pan and set aside.
- Lower the heat to medium-low, add the remaining 2 tablespoons of butter, and stir in the flour to create a roux for about a minute.
- Slowly pour in the chicken broth while scraping any bits stuck to the pan.
- Add the milk, sour cream, onion powder, garlic powder, Italian seasoning, and ranch seasoning mix, stirring until smooth.
- Return the chicken to the skillet, spooning the sauce over it, and allow it to simmer for 5–7 minutes until cooked through.
- Garnish with fresh parsley if desired and serve warm.
Notes
Use a meat thermometer to ensure the chicken reaches 165°F (74°C). Adjust sauce thickness to preference.
