Ingredients

  • 4 boneless, skinless chicken breasts (58 oz. each)
  • Salt and pepper to taste
  • 3 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1 tablespoon flour
  • 1 cup low sodium chicken broth
  • ½ cup milk
  • ¼ cup sour cream
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 1 (1 oz.) packet ranch seasoning mix
  • Fresh parsley, to garnish (optional)

Instructions

  1. Pound the chicken breasts to an even thickness of about 1 inch. Season with salt and pepper.
  2. In a large skillet, melt 1 tablespoon of butter and olive oil over medium-high heat and sear the chicken for 4–5 minutes on each side until golden brown. Remove from the pan and set aside.
  3. Lower the heat to medium-low, add the remaining 2 tablespoons of butter, and stir in the flour to create a roux for about a minute.
  4. Slowly pour in the chicken broth while scraping any bits stuck to the pan.
  5. Add the milk, sour cream, onion powder, garlic powder, Italian seasoning, and ranch seasoning mix, stirring until smooth.
  6. Return the chicken to the skillet, spooning the sauce over it, and allow it to simmer for 5–7 minutes until cooked through.
  7. Garnish with fresh parsley if desired and serve warm.

Notes

Use a meat thermometer to ensure the chicken reaches 165°F (74°C). Adjust sauce thickness to preference.
