Ingredients

  • 5 frozen boneless skinless chicken breasts (about 1.5 lbs.)
  • 2 tablespoons butter, cubed
  • 1 packet Zesty Italian dressing mix (dry)
  • 6 ounces softened cream cheese, cubed
  • 3 cups cooked rice
  • Fresh flat-leaf parsley for garnish (optional)

Instructions

  1. Place the frozen chicken breasts at the bottom of your crockpot.
  2. Dot the chicken with cubes of butter.
  3. Sprinkle the Zesty Italian dressing mix over the chicken evenly.
  4. Cover the crockpot and set it to low heat, allowing it to cook for 6-8 hours until tender.
  5. Add the cubed cream cheese and continue to cook on low for an additional hour.
  6. Prepare rice according to package instructions.
  7. Once the chicken is done, stir shredded chicken into the creamy sauce and serve it over the warm rice, garnished with fresh parsley.
