Ingredients

- 8 oz penne pasta
- 2 cups water
- Salt (to taste)
- 1 large ripe avocado
- 2 garlic cloves
- 1 cup baby spinach
- 1 green chili (optional)
- Crushed black pepper (to taste)
- 1 teaspoon olive oil (optional)
- 1 tablespoon lemon juice
- Additional salt (to adjust taste)
- 1/4 cup water (or as needed)
- Red chili flakes (for garnish)
Instructions
- In a medium pot, bring 2 cups of water to a boil with a pinch of salt.
- Add the penne pasta, stirring occasionally, and cook according to package directions until al dente. Drain, reserving a little cooking water.
- In a blender or food processor, combine avocado, garlic, spinach, green chili, olive oil, lemon juice, and a pinch of salt. Blend until smooth, adding reserved pasta water until desired consistency is reached.
- Toss the cooked pasta with the avocado sauce in a large mixing bowl until coated. Serve immediately, garnishing with red chili flakes.
Notes
For a thinner sauce, add more reserved pasta water. Use fresh ingredients for the best flavor.
