  • 1/2 cup chicken broth
  • 8 oz cream cheese (softened)
  • 1 tablespoon fresh chives (chopped)
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • 1/2 cup shredded sharp cheddar cheese (optional, for topping)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Season both sides of the chicken breasts with salt, pepper, and paprika, ensuring an even coating.
  3. In a large skillet, heat olive oil over medium heat and sear the chicken for 2-3 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the chicken broth, scraping up any bits from the bottom of the pan. Let it reduce for 1-2 minutes.
  6. Stir in the softened cream cheese until smooth, then mix in the fresh chives and season with salt and pepper.
  7. Place the seared chicken in the prepared baking dish and pour the creamy mixture over the top. Sprinkle shredded cheddar cheese on top if desired.
  8. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C). Broil for the last 2-3 minutes for a golden crust if using cheese.
  9. Garnish with fresh parsley and serve warm with your preferred sides.
