Description
A creamy, flavorful chicken dish inspired by the vibrant culinary traditions of Mexico.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- 1/2 cup chicken broth
- 8 oz cream cheese (softened)
- 1 tablespoon fresh chives (chopped)
- 1 teaspoon paprika
- Salt and pepper (to taste)
- 1/2 cup shredded sharp cheddar cheese (optional, for topping)
- Fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
- Season both sides of the chicken breasts with salt, pepper, and paprika, ensuring an even coating.
- In a large skillet, heat olive oil over medium heat and sear the chicken for 2-3 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth, scraping up any bits from the bottom of the pan. Let it reduce for 1-2 minutes.
- Stir in the softened cream cheese until smooth, then mix in the fresh chives and season with salt and pepper.
- Place the seared chicken in the prepared baking dish and pour the creamy mixture over the top. Sprinkle shredded cheddar cheese on top if desired.
- Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C). Broil for the last 2-3 minutes for a golden crust if using cheese.
- Garnish with fresh parsley and serve warm with your preferred sides.
Notes
For best results, use fresh chicken and ensure the cream cheese is at room temperature for easy blending.
