Description

These cranberry crumble bars are packed with tart cranberries and sweet orange juice, topped with a buttery crumble for a delightful treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 cups fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. In a separate bowl, whisk together flour, oats, salt, and baking powder; mix into the butter-sugar mixture.
  4. Press half of the mixture into the bottom of the baking dish.
  5. In a saucepan, combine cranberries and orange juice; cook until cranberries burst, about 5-7 minutes.
  6. Spread the cranberry mixture over the crust.
  7. Crumble the remaining oat mixture over the top.
  8. Bake for 25-30 minutes until the topping is golden brown.
  9. Let cool before glazing with powdered sugar, milk, and vanilla.
  10. Slice into squares and enjoy!

Store bars in an airtight container for up to a week; freeze individual pieces for up to three months.
