Description
This comforting sausage potato soup envelops you in creamy broth with tender potatoes and flavorful kielbasa, making it perfect for chilly nights.
Ingredients
Scale
- 1 lb kielbasa, diced
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion turns fragrant and translucent, about 3-4 minutes.
- Add in the diced kielbasa and cook until browned, about 5 minutes.
- Stir in the diced potatoes, then pour in the broth. Bring to a gentle boil, then reduce the heat to let it simmer until the potatoes are fork-tender, about 15-20 minutes.
- Gently stir in the heavy cream and season with salt and pepper to taste. Allow the flavors to meld together for an additional 5 minutes.
- Serve hot, garnished with fresh parsley if desired, and enjoy.
Notes
Taste as you go to adjust seasoning according to your preference. For an even creamier texture, use an immersion blender to blend a portion of the soup before adding the cream.
