- 1 pound chicken breast, diced
- 1 pound sausage (Andouille or smoked turkey), sliced
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 1 cup chopped celery
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 2 cups uncooked rice
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Place the diced chicken, sliced sausage, chopped onion, green bell pepper, celery, minced garlic, undrained diced tomatoes, chicken broth, and Cajun seasoning into the Crock Pot.
- Stir gently to combine all the ingredients, ensuring the seasonings incorporate evenly.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the uncooked rice. Add extra broth if needed.
- Once the rice is tender and cooked through, taste and adjust seasoning with salt and pepper.
- Serve hot, garnishing with freshly chopped green onions.
