- 4 boneless, skinless chicken breasts
- 1 dry ranch dressing packet
- 1 tsp onion powder
- 1 tsp ground black pepper
- 1 (10 oz) can Rotel diced tomatoes and green chilies (do not drain)
- 1 (15 oz) can whole kernel corn (drained)
- 1 (15 oz) can black beans (drained and rinsed)
- 1 (8 oz) block of plain cream cheese
- 2 fresh squeezed limes
- ½ cup chicken broth
Instructions
- Place the chicken breasts at the bottom of your Crock Pot.
- Layer the rinsed black beans, drained corn, and Rotel tomatoes on top, spreading them evenly over the chicken.
- Sprinkle onion powder and ranch seasoning over the mixture, followed by ground black pepper.
- Squeeze fresh lime juice over the toppings.
- Pour the chicken broth over everything, ensuring the ingredients are moistened. Then, place the block of cream cheese right on top.
- Secure the lid on your slow cooker, choosing HIGH for 3-4 hours or LOW for 5-6 hours.
- Once cooked, remove the chicken breasts, shred them, and return them to the Crock Pot.
- Stir everything together until the cream cheese is well incorporated.
- Serve hot over rice or in warm tortillas.
