Description

A flavorful and easy slow cooker dish combining tender chicken with zesty lime and a creamy sauce, perfect for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 dry ranch dressing packet
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 1 (10 oz) can Rotel diced tomatoes and green chilies (do not drain)
  • 1 (15 oz) can whole kernel corn (drained)
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 (8 oz) block of plain cream cheese
  • 2 fresh squeezed limes
  • ½ cup chicken broth

Instructions

  1. Place the chicken breasts at the bottom of your Crock Pot.
  2. Layer the rinsed black beans, drained corn, and Rotel tomatoes on top, spreading them evenly over the chicken.
  3. Sprinkle onion powder and ranch seasoning over the mixture, followed by ground black pepper.
  4. Squeeze fresh lime juice over the toppings.
  5. Pour the chicken broth over everything, ensuring the ingredients are moistened. Then, place the block of cream cheese right on top.
  6. Secure the lid on your slow cooker, choosing HIGH for 3-4 hours or LOW for 5-6 hours.
  7. Once cooked, remove the chicken breasts, shred them, and return them to the Crock Pot.
  8. Stir everything together until the cream cheese is well incorporated.
  9. Serve hot over rice or in warm tortillas.
