- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 4 slices provolone or mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Slice the chicken breasts thinly against the grain.
- Heat olive oil in a large skillet over medium heat, then sauté the sliced onions and bell peppers until softened and slightly caramelized, about 5-7 minutes.
- Move the veggies to the side and add the chicken. Season with garlic powder, onion powder, smoked paprika, salt, and pepper, cooking until the chicken is fully cooked, about 7-10 minutes.
- Reduce heat to low, layer cheese slices over the chicken and vegetables, and cover until the cheese is melted.
- Stir everything together, garnish with parsley, and serve hot.
Notes
For a plant-based version, substitute chicken with sautéed mushrooms and tofu. Customize the heat level by adding jalapeños or cayenne pepper.
