Ingredients

  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 slices provolone or mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Slice the chicken breasts thinly against the grain.
  2. Heat olive oil in a large skillet over medium heat, then sauté the sliced onions and bell peppers until softened and slightly caramelized, about 5-7 minutes.
  3. Move the veggies to the side and add the chicken. Season with garlic powder, onion powder, smoked paprika, salt, and pepper, cooking until the chicken is fully cooked, about 7-10 minutes.
  4. Reduce heat to low, layer cheese slices over the chicken and vegetables, and cover until the cheese is melted.
  5. Stir everything together, garnish with parsley, and serve hot.

Notes

For a plant-based version, substitute chicken with sautéed mushrooms and tofu. Customize the heat level by adding jalapeños or cayenne pepper.
