- 9 – 12 lasagna noodles (regular or oven-ready)
- 2 cups cooked chicken (shredded or diced)
- 3 cups Alfredo sauce (homemade or store-bought)
- 2 cups ricotta cheese (or cottage cheese)
- 1 egg
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach (optional)
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
Instructions
- Cook Noodles if Needed: Begin by boiling lasagna noodles in salted water until al dente (about 8-10 minutes). Drain and lay flat on parchment paper to prevent sticking.
- Prepare the Filling: In a mixing bowl, blend ricotta cheese, egg, garlic powder, black pepper, and Italian seasoning together. Stir in fresh spinach if desired.
- Layer the Lasagna: In a greased baking dish, spread a layer of Alfredo sauce at the bottom. Arrange a layer of noodles over the sauce, followed by a layer of the ricotta mixture, shredded chicken, and generous sprinkles of mozzarella and Parmesan. Repeat the layering process, ending with a final layer of noodles topped off with Alfredo sauce.
- Bake to Perfection: Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is beautifully golden and bubbly.
- Rest & Serve: Allow the lasagna to cool for about 10 minutes before slicing. Optionally, garnish with fresh parsley.
Notes
Make ahead and freeze before baking. Bake from frozen, adding an extra 15-20 minutes to the cook time.
