Description

A comforting, flavor-packed casserole featuring tender chicken, zesty peppers, and gooey cheese, designed to bring family together.


Ingredients

  • 2 cups cooked chicken breast or thighs, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 2 tablespoons fajita seasoning
  • 8 corn tortillas
  • 1 cup canned diced tomatoes with green chilies
  • 1 cup canned corn, drained
  • 1 can (15 oz) refried beans
  • 2 cups queso cheese sauce
  • 1 ½ cups shredded Mexican cheese blend
  • ½ cup fresh diced tomatoes (for garnish)
  • 1 jalapeño, sliced (for garnish)
  • 2 tablespoons chopped chives (for garnish)

Instructions

  1. In a skillet over medium-high heat, add sliced chicken with fajita seasoning, onions, and bell peppers. Sauté until the chicken is thoroughly cooked and vegetables have softened (about 8-10 minutes).
  2. Preheat your oven to 375°F.
  3. Grease a 9×13-inch casserole dish and lay 4 corn tortillas at the bottom, slightly overlapping if necessary.
  4. Spread the refried beans evenly over the tortillas, then layer half of the cooked chicken mixture, followed by corn and diced tomatoes with chilies.
  5. Pour half of the queso sauce over the layered ingredients, then sprinkle half of the shredded cheese.
  6. Place remaining tortillas on top and repeat the layering process with the remaining chicken mixture, corn, and diced tomatoes. Pour the rest of the queso and finish with the remaining shredded cheese on top.
  7. Cover the casserole with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  8. Allow the casserole to rest for 5-10 minutes before slicing. Garnish with fresh diced tomatoes, jalapeño slices, and chopped chives.

Notes

For a crispy top, consider broiling the casserole for 1-2 minutes after baking.
