- 8 oz pasta (penne or rotini)
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Place the chicken breasts in your slow cooker, sprinkling Cajun seasoning over the top.
- Add the chopped onions, bell peppers, minced garlic, and diced tomatoes with juices.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
- Shred the chicken and return it to the slow cooker.
- Stir in the heavy cream and uncooked pasta, cover, and cook on high for 30-40 minutes until pasta is tender.
- Season with salt and pepper to taste, serve warm topped with Parmesan cheese.
