Ingredients

  • 1 pound chicken breast
  • 1 tablespoon Cajun seasoning
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 8 oz pasta (penne or rotini)
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Place the chicken breasts in your slow cooker, sprinkling Cajun seasoning over the top.
  2. Add the chopped onions, bell peppers, minced garlic, and diced tomatoes with juices.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  4. Shred the chicken and return it to the slow cooker.
  5. Stir in the heavy cream and uncooked pasta, cover, and cook on high for 30-40 minutes until pasta is tender.
  6. Season with salt and pepper to taste, serve warm topped with Parmesan cheese.
