- 8 ounces cheddar cheese (shredded from a block)
- 8 ounces broccoli (defrosted if frozen; steamed if raw)
- 64 Ritz crackers (crushed – about 2 sleeves)
- 1/4 cup butter (melted)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a casserole dish with nonstick spray.
- Cut the chicken into bite-sized pieces and season with seasoned salt.
- If using frozen broccoli, ensure it is completely thawed and well-drained.
- Spread the broccoli evenly over the chicken in the casserole dish.
- Blend the milk and cream of chicken soup until smooth.
- Stir in 1 1/2 cups of cheddar cheese into the milk mixture until creamy.
- Pour the cheese sauce over the chicken and broccoli.
- Combine the melted butter with crushed Ritz crackers and sprinkle on top.
- Bake for 30 to 40 minutes until the chicken reaches 160°F.
- Let the casserole rest for 10 minutes before serving.
Notes
For a creamier dish, consider adding more cheese or substituting half the milk for sour cream. For an added crunch, broil the casserole for a minute or two before serving.
