  • 3/4 cup milk
  • 10.5 ounces cream of chicken soup
  • 8 ounces cheddar cheese (shredded from a block)
  • 8 ounces broccoli (defrosted if frozen; steamed if raw)
  • 64 Ritz crackers (crushed – about 2 sleeves)
  • 1/4 cup butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a casserole dish with nonstick spray.
  2. Cut the chicken into bite-sized pieces and season with seasoned salt.
  3. If using frozen broccoli, ensure it is completely thawed and well-drained.
  4. Spread the broccoli evenly over the chicken in the casserole dish.
  5. Blend the milk and cream of chicken soup until smooth.
  6. Stir in 1 1/2 cups of cheddar cheese into the milk mixture until creamy.
  7. Pour the cheese sauce over the chicken and broccoli.
  8. Combine the melted butter with crushed Ritz crackers and sprinkle on top.
  9. Bake for 30 to 40 minutes until the chicken reaches 160°F.
  10. Let the casserole rest for 10 minutes before serving.
