- 2 tablespoons avocado or canola oil
- 1 white onion, diced
- 2 cloves of garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 4 chipotle peppers (from a can of chipotles in adobo sauce)
- 2 teaspoons Kosher salt
- 2 teaspoons ground cumin
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon ground paprika
- 4 boneless, skinless chicken breasts
- 2 tablespoons chopped cilantro (optional)
Instructions
- In a large frying pan or Dutch oven, add the oil over medium-high heat and allow it to come up to temperature.
- Add the diced onion and sauté for about 5 minutes or until it becomes softened and translucent.
- Stir in the minced garlic and continue sautéing for an additional minute until fragrant, then remove from heat.
- In a blender or food processor, combine the crushed tomatoes, chipotle peppers, salt, cumin, black pepper, oregano, and paprika. Blend until the mixture is smooth.
- Pour the blended sauce back into the pan and increase the heat to medium-high. Once it simmers, add the chicken breasts.
- Cover the pan slightly ajar with a lid, allowing the chicken to simmer for 45-50 minutes. Flip the chicken halfway through to enhance flavor absorption.
- Once fully cooked, remove the chicken and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.
- Return the shredded chicken to the sauce and let it simmer for an additional 10-15 minutes to meld the flavors. Garnish with fresh cilantro before serving.
