Description

Ingredients

  • 2 tablespoons avocado or canola oil
  • 1 white onion, diced
  • 2 cloves of garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 4 chipotle peppers (from a can of chipotles in adobo sauce)
  • 2 teaspoons Kosher salt
  • 2 teaspoons ground cumin
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon ground paprika
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons chopped cilantro (optional)

Instructions

  1. In a large frying pan or Dutch oven, add the oil over medium-high heat and allow it to come up to temperature.
  2. Add the diced onion and sauté for about 5 minutes or until it becomes softened and translucent.
  3. Stir in the minced garlic and continue sautéing for an additional minute until fragrant, then remove from heat.
  4. In a blender or food processor, combine the crushed tomatoes, chipotle peppers, salt, cumin, black pepper, oregano, and paprika. Blend until the mixture is smooth.
  5. Pour the blended sauce back into the pan and increase the heat to medium-high. Once it simmers, add the chicken breasts.
  6. Cover the pan slightly ajar with a lid, allowing the chicken to simmer for 45-50 minutes. Flip the chicken halfway through to enhance flavor absorption.
  7. Once fully cooked, remove the chicken and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.
  8. Return the shredded chicken to the sauce and let it simmer for an additional 10-15 minutes to meld the flavors. Garnish with fresh cilantro before serving.

Notes
