- 1 tablespoon olive oil
- 6 boneless skinless chicken thighs or breasts (cut into bite-sized pieces)
- 4 bell peppers (sliced; vary colors for visual appeal)
- 1 small onion (sliced)
- 1 recipe or package of fajita seasoning mix (taco seasoning can also be used)
- 1 cup sour cream
- 4 ounces cream cheese (softened)
- 2 cups cheddar cheese (grated)
- Optional for serving: avocado, guacamole, sour cream, and salsa
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add the chicken pieces and sauté until fully cooked and golden brown, about 5–7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the sliced onions and bell peppers; sauté until tender, about 5 minutes.
- Return the chicken to the pan, stirring in the fajita seasoning mix, sour cream, and softened cream cheese until well combined.
- Transfer the flavorful mixture to a greased 9×13 inch baking dish and top with grated cheddar cheese.
- Bake in the preheated oven for 10 to 15 minutes or until the cheese is melted and bubbly.
Notes
For extra flavor, consider garnishing with fresh cilantro or adding sliced jalapeños for heat.
