- 2 cups cooked chicken, shredded
- 1 cup bell peppers, sliced (any color)
- 1 cup onion, sliced
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can diced tomatoes (14.5 oz)
- 1 packet fajita seasoning
- 1 cup salsa
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
- In a large mixing bowl, combine the shredded chicken, sliced bell peppers, onion, cooked rice, shredded cheese, diced tomatoes, fajita seasoning, and salsa. Stir until well-blended.
- Pour the mixture into the prepared casserole dish, spreading it evenly.
- Bake for 25-30 minutes, or until the cheese is bubbly.
- Allow to cool for a few minutes before serving.
Notes
Casserole can be prepared in advance and refrigerated. Also freezes well for up to three months.
