Description

A flavorful twist on a classic chicken fajita dish baked into a comforting casserole, perfect for family dinners and meal prepping.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, sliced (any color)
  • 1 cup onion, sliced
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can diced tomatoes (14.5 oz)
  • 1 packet fajita seasoning
  • 1 cup salsa
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
  2. In a large mixing bowl, combine the shredded chicken, sliced bell peppers, onion, cooked rice, shredded cheese, diced tomatoes, fajita seasoning, and salsa. Stir until well-blended.
  3. Pour the mixture into the prepared casserole dish, spreading it evenly.
  4. Bake for 25-30 minutes, or until the cheese is bubbly.
  5. Allow to cool for a few minutes before serving.

Notes

Casserole can be prepared in advance and refrigerated. Also freezes well for up to three months.
