- 1 cup Monterey Jack cheese
- 4 large flour tortillas
- 1/2 cup refried beans (optional)
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Oil for frying (if frying)
- Cooking spray (if baking)
- Toppings (sour cream, salsa, guacamole)
Instructions
- Preheat your oven to 375°F (190°C) if you’re baking the chimichangas.
- In a large mixing bowl, combine shredded chicken, Monterey Jack cheese, refried beans (if using), cumin, garlic powder, onion powder, and season with salt and pepper to taste.
- Place a tortilla on a flat surface and spoon approximately 1/2 cup of the chicken mixture into the center.
- Fold the sides of the tortilla in and roll it tightly, securing the filling inside. Repeat with the remaining tortillas.
- For baking, place seam-side down on a greased baking sheet and spray the tops with cooking spray. Bake for 25-30 minutes until golden brown. If frying, heat oil in a skillet over medium heat and fry each chimichanga until golden brown, about 3-4 minutes per side.
- Once cooked, transfer the chimichangas to paper towels to absorb excess oil.
- Serve warm, adorned with toppings like sour cream, salsa, or guacamole for an authentic touch.
