- 1 tablespoon olive oil
- 1 cup Caesar dressing (store-bought or homemade)
- 1/2 cup Parmesan cheese (grated)
- 1 pound asparagus spears (trimmed)
- 1 teaspoon garlic powder
- 1 lemon (cut into wedges for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Season both sides of the chicken breasts generously with salt and pepper.
- In a large oven-proof skillet, heat olive oil over medium-high heat. Sear the chicken for about 3-4 minutes on each side until it turns golden brown.
- Remove the skillet from heat and pour Caesar dressing over the chicken, ensuring a thick coat. Sprinkle Parmesan cheese evenly on top.
- Arrange the trimmed asparagus around the chicken, and dust garlic powder over the asparagus.
- Transfer the skillet to the oven and bake for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the asparagus is tender yet crisp.
- Allow it to rest for a few minutes, then add a sprinkle of freshly squeezed lemon juice before serving.
Notes
For the best texture, opt for freshly grated Parmesan. You can replace chicken with tofu for a vegan version.
