- 2 cups cherry tomatoes, halved
- 1 cup fresh mozzarella, diced
- ½ cup fresh basil, chopped
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder (optional)
Instructions
- Preheat your grill or oven to 400°F (200°C). Season the chicken breasts with salt, pepper, and garlic powder if desired.
- In a mixing bowl, toss together cherry tomatoes, mozzarella, basil, olive oil, and balsamic vinegar.
- Cook the chicken: Grill for 6-8 minutes on each side until an internal temperature of 165°F is reached, or bake in a greased dish for 25 minutes.
- Once cooked, top each chicken breast with the bruschetta mixture and grill for an additional 2-3 minutes or broil in the oven until bubbly.
- Plate and serve warm, drizzling any remaining juices over the top and adding extra basil if desired.
Notes
For enhanced flavor, marinate the chicken in balsamic vinegar and olive oil before cooking. Serve warm for best taste.
