Description

A delightful casserole combining sweet blueberries and zesty lemon, perfect for brightening your mornings.


Ingredients

  • 1 package cream cheese (8 oz)
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tbsp vanilla extract
  • 1 cup blueberries (for folding into the mix)
  • 1 tbsp lemon juice (for folding into the mix)
  • 2 loaves French bread, cubed
  • 2 cups milk
  • 8 large eggs
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Zest of 1 lemon + 2 tbsp lemon juice
  • 1 cup blueberries (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and set the cubed French bread aside in a mixing bowl.
  2. Blend the softened cream cheese, powdered sugar, milk, vanilla extract, lemon juice, and 1 cup blueberries until smooth.
  3. In a separate bowl, whisk together the eggs, milk, cinnamon, nutmeg, lemon zest, and remaining lemon juice until well combined.
  4. Pour the egg mixture over the bread and fold in the cream cheese mixture until well-coated.
  5. Transfer to a greased 9×13 inch baking dish and top with remaining blueberries.
  6. Bake for 45-50 minutes or until golden brown and set. Allow to cool slightly before serving.

Notes

Allow the casserole to rest for a few hours or overnight for richer flavor. Serve warmed with optional toppings such as powdered sugar or whipped cream.
