- 2 pounds beef chuck roast
- 2 cups beef broth
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, quartered
- 4 cloves garlic
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper, to taste
- Corn tortillas
- 1 cup shredded cheese (like Oaxaca or mozzarella)
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- In a large pot, bring the beef broth to a gentle simmer. Add the dried guajillo and ancho chiles, garlic, and quartered onion. Allow the mixture to simmer for about 10 minutes, until the chiles have softened.
- Carefully transfer the simmered ingredients into a blender. Add the cumin, oregano, and a pinch of salt and pepper, then blend until the sauce is smooth and aromatic.
- In your slow cooker, place the beef chuck roast and pour the blended sauce over the top. Cover and set it to cook on low for 8 hours, until the beef is fork-tender.
- Once cooking is complete, remove the beef and shred it using two forks.
- Heat a skillet over medium-high heat. Briefly dip the corn tortillas into the consommé, then lay them flat on the hot skillet.
- On one half of each tortilla, add a generous portion of shredded beef and a sprinkle of cheese. Fold the tortilla over and cook until it’s crispy and the cheese is melted.
- Serve your tacos with a side of consommé for dipping, garnished with chopped cilantro and lime wedges.
