Ingredients

  • 2 pounds beef chuck roast
  • 2 cups beef broth
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, quartered
  • 4 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper, to taste
  • Corn tortillas
  • 1 cup shredded cheese (like Oaxaca or mozzarella)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large pot, bring the beef broth to a gentle simmer. Add the dried guajillo and ancho chiles, garlic, and quartered onion. Allow the mixture to simmer for about 10 minutes, until the chiles have softened.
  2. Carefully transfer the simmered ingredients into a blender. Add the cumin, oregano, and a pinch of salt and pepper, then blend until the sauce is smooth and aromatic.
  3. In your slow cooker, place the beef chuck roast and pour the blended sauce over the top. Cover and set it to cook on low for 8 hours, until the beef is fork-tender.
  4. Once cooking is complete, remove the beef and shred it using two forks.
  5. Heat a skillet over medium-high heat. Briefly dip the corn tortillas into the consommé, then lay them flat on the hot skillet.
  6. On one half of each tortilla, add a generous portion of shredded beef and a sprinkle of cheese. Fold the tortilla over and cook until it’s crispy and the cheese is melted.
  7. Serve your tacos with a side of consommé for dipping, garnished with chopped cilantro and lime wedges.
