Description

Delicious baked chimichangas filled with savory chicken, black beans, and melty cheese, perfect for gatherings with friends.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Cooking spray
  • Sour cream and salsa for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the shredded chicken, black beans, corn, cheese, cumin, chili powder, salt, and pepper until well combined.
  3. Lay a tortilla flat and scoop about 1/2 cup of the filling into the center.
  4. Fold in the sides of the tortilla and roll it up tightly.
  5. Repeat with the remaining tortillas.
  6. Arrange the chimichangas seam-side down on a baking sheet coated with cooking spray.
  7. Lightly spray the tops with cooking spray.
  8. Bake for 20-25 minutes until golden brown and crispy.
  9. Serve warm with sour cream and salsa.
