- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 4 large flour tortillas
- Cooking spray
- Sour cream and salsa for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the shredded chicken, black beans, corn, cheese, cumin, chili powder, salt, and pepper until well combined.
- Lay a tortilla flat and scoop about 1/2 cup of the filling into the center.
- Fold in the sides of the tortilla and roll it up tightly.
- Repeat with the remaining tortillas.
- Arrange the chimichangas seam-side down on a baking sheet coated with cooking spray.
- Lightly spray the tops with cooking spray.
- Bake for 20-25 minutes until golden brown and crispy.
- Serve warm with sour cream and salsa.
