- 4 chicken breasts
- 1 cup asparagus, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine asparagus, sun-dried tomatoes, and mozzarella cheese.
- Season both sides of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Carefully make a pocket in each chicken breast by slicing along the side.
- Stuff each chicken breast with the asparagus and cheese mixture.
- Heat olive oil in a skillet over medium heat. Sear each stuffed chicken breast for 3-4 minutes on each side.
- Transfer the chicken to a baking dish and bake for 25-30 minutes until cooked through.
- Let rest for a few minutes before slicing to serve.
Notes
Pound chicken breasts to an even thickness for best results. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
