Ingredients

  • 4 chicken breasts
  • 1 cup asparagus, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine asparagus, sun-dried tomatoes, and mozzarella cheese.
  3. Season both sides of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  4. Carefully make a pocket in each chicken breast by slicing along the side.
  5. Stuff each chicken breast with the asparagus and cheese mixture.
  6. Heat olive oil in a skillet over medium heat. Sear each stuffed chicken breast for 3-4 minutes on each side.
  7. Transfer the chicken to a baking dish and bake for 25-30 minutes until cooked through.
  8. Let rest for a few minutes before slicing to serve.

Notes

Pound chicken breasts to an even thickness for best results. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
