- 1 pound chicken breast, cut into bite-sized pieces
- 1/4 cup cornstarch
- 1/2 cup fresh orange juice
- Zest of 1 orange
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/4 cup low-sugar soy sauce or tamari
- 1 tablespoon honey or a sugar substitute (optional)
- Salt and pepper, to taste
- Cooking spray or a small amount of oil for the air fryer
- Brown rice or garlic fried rice, for serving
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a bowl, coat the chicken pieces with cornstarch, seasoning with salt and pepper.
- In another bowl, whisk together the orange juice, orange zest, garlic, ginger, soy sauce, and honey.
- Place the coated chicken in the air fryer basket and spray lightly with oil. Cook for 10-12 minutes, shaking the basket halfway through.
- In the last 2-3 minutes, brush or toss the chicken with the orange sauce.
- Serve hot over brown rice or garlic fried rice.
