Description

Ingredients

  • 4 boneless skinless chicken breasts (6 oz each)
  • 2 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground pepper
  • 12 tablespoon olive oil
  • 34 medium ripe tomatoes (about 1 lb), cored, seeded, chopped to ½” dice
  • 1 teaspoon kosher salt
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoon balsamic vinegar
  • 2 tablespoon fresh basil, thinly sliced
  • Ground pepper, to taste
  • Balsamic glaze, optional

Instructions

1. Combine chopped tomatoes with salt and garlic in a mixing bowl. Let sit while you cook the chicken.

2. Place chicken breast between parchment paper and pound to less than 1 inch thickness. Repeat with remaining chicken.

3. Mix Italian seasoning, salt, garlic powder, onion powder, and pepper in a bowl. Brush chicken with olive oil and season both sides.

4. Grill option: Heat grill or grill pan over high heat. Cook chicken 5–6 minutes per side until internal temp is 165°F. Rest 5 minutes.

5. Bake option: Preheat oven to 400°F. Roast chicken on parchment-lined sheet for 10–12 minutes until 165°F. Rest 5 minutes.

6. Stir olive oil, balsamic vinegar, basil, and pepper into tomato mix. Adjust seasoning.

7. Top chicken with bruschetta, drizzle with balsamic glaze, and serve immediately.

Notes

Pound chicken evenly for quick cooking.

Use fresh ripe tomatoes for best flavor.

Let chicken rest before topping to keep it juicy.

Bruschetta can be made ahead a few hours and chilled.
