- 1 (15-ounce) can Black Beans, drained and rinsed
- 1 large ripe Avocado, mashed
- ½ cup Frozen or Canned Corn, drained and thawed
- ¼ cup finely chopped Red Onion
- ¼ cup fresh Cilantro, chopped
- 1 tablespoon Lime Juice, freshly squeezed
- ½ teaspoon Cumin Powder
- ¼ teaspoon Chili Powder
- Salt and Black Pepper, to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- Mash the avocado in a medium bowl until desired texture is achieved, then mix in the lime juice.
- Add the rinsed black beans, corn, red onion, and cilantro to the bowl; mix gently.
- Season with cumin, chili powder, salt, and pepper; stir to combine.
- Warm tortillas in a dry skillet over medium heat for better rolling.
- Lay a tortilla flat, spoon one-quarter of the filling into the center, and shape into a log.
- Fold in the sides and roll the tortilla tightly from the bottom up, tucking in the filling. Repeat until all ingredients are used.
- Enjoy the burritos warm, and slice in half if desired.
