Description

Quick, tasty, and filled with heart-healthy ingredients, these vegan burrito wraps bring a burst of Mexican flavor right to your table in just 10 minutes.


Ingredients

  • 1 (15-ounce) can Black Beans, drained and rinsed
  • 1 large ripe Avocado, mashed
  • ½ cup Frozen or Canned Corn, drained and thawed
  • ¼ cup finely chopped Red Onion
  • ¼ cup fresh Cilantro, chopped
  • 1 tablespoon Lime Juice, freshly squeezed
  • ½ teaspoon Cumin Powder
  • ¼ teaspoon Chili Powder
  • Salt and Black Pepper, to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. Mash the avocado in a medium bowl until desired texture is achieved, then mix in the lime juice.
  2. Add the rinsed black beans, corn, red onion, and cilantro to the bowl; mix gently.
  3. Season with cumin, chili powder, salt, and pepper; stir to combine.
  4. Warm tortillas in a dry skillet over medium heat for better rolling.
  5. Lay a tortilla flat, spoon one-quarter of the filling into the center, and shape into a log.
  6. Fold in the sides and roll the tortilla tightly from the bottom up, tucking in the filling. Repeat until all ingredients are used.
  7. Enjoy the burritos warm, and slice in half if desired.
