- 1 large red bell pepper – cut into 1-inch pieces
- 1 large orange bell pepper – cut into 1-inch pieces
- 1 red onion – peeled and cut into 1-inch pieces
- 1 medium zucchini – cut into 1-inch pieces
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- Pinch of black pepper
- 1 package chicken sausage (12 oz) – robust Italian flavor
Instructions
- Start by chopping all the veggies. Place them into a large mixing bowl.
- Drizzle the avocado oil over the chopped vegetables and toss them gently to coat evenly.
- In a separate small bowl, combine garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well and then sprinkle the spice blend over the veggies, tossing to coat.
- Slice the chicken sausage into ¾-inch rounds and add them to the vegetable bowl. Toss everything together until well combined.
- Preheat the air fryer to 390°F. While it’s heating, spray the air fryer basket with cooking spray for easy cleanup.
- Once preheated, layer the sausage and vegetable mixture evenly in the air fryer basket. Depending on the size, you may need to cook in batches.
- Cook for 10 minutes, flipping the contents halfway through to promote even cooking.
- When done, remove the air-fried chicken sausage and veggies. Serve immediately, either plain or over a bed of cauliflower rice or brown rice.
Notes
For best results, preheat the air fryer and avoid overcrowding the basket.
