Description

A quick and nutritious air fryer dish featuring chicken sausage and vibrant roasted veggies, perfect for busy weeknights.


Ingredients

  • 1 large red bell pepper – cut into 1-inch pieces
  • 1 large orange bell pepper – cut into 1-inch pieces
  • 1 red onion – peeled and cut into 1-inch pieces
  • 1 medium zucchini – cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • Pinch of black pepper
  • 1 package chicken sausage (12 oz) – robust Italian flavor

Instructions

  1. Start by chopping all the veggies. Place them into a large mixing bowl.
  2. Drizzle the avocado oil over the chopped vegetables and toss them gently to coat evenly.
  3. In a separate small bowl, combine garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well and then sprinkle the spice blend over the veggies, tossing to coat.
  4. Slice the chicken sausage into ¾-inch rounds and add them to the vegetable bowl. Toss everything together until well combined.
  5. Preheat the air fryer to 390°F. While it’s heating, spray the air fryer basket with cooking spray for easy cleanup.
  6. Once preheated, layer the sausage and vegetable mixture evenly in the air fryer basket. Depending on the size, you may need to cook in batches.
  7. Cook for 10 minutes, flipping the contents halfway through to promote even cooking.
  8. When done, remove the air-fried chicken sausage and veggies. Serve immediately, either plain or over a bed of cauliflower rice or brown rice.

Notes

For best results, preheat the air fryer and avoid overcrowding the basket.
